This post is more like a method than a recipe because veggie salads are so versatile. You just add whatever vegetables you have on hand with your favorite condiments and ingredients, top it with a good salad dressing or make your own and you’ve got a lunch, dinner or a snack to keep you going.

I grew up eating salads, my mother LOVED them and so do I. In fact, we always had a salad at every meal. But salads don’t have to be side dishes, they can be the meal and many nights that’s all I would have for dinner.

I just prepped all my ingredients, formed an assembly line and added them into a large bowl. Then, sat in front of the tube watching old 30s movies!

So today, I’m featuring a few of my favorite veggie combo salads for you to get inspired with. This is particularly great if you are vegetarian, vegan or even a meat eater. There’s something here for everyone I hope!
