Breakfast is definitely my favorite meal of the day! A slice of toast with fruit, for example, is perfection. My day job is demanding so making sure I eat a light meal helps me stay alert.
I used to skip breakfast in my 20’s and just eat lunch while working, but by 2 PM everyday, I crashed out! And, I always hated that feeling but I didn’t make the immediate connection that skipping breakfast was the cause.
It wasn’t until I committed myself to eating something in the mornings, even a small portion, that I realize what a difference it made. No more afternoon crashing and I could actually focus better too.
For example, I’ve had to work on some website problems on my day job and if I had skipped breakfast, by the afternoon I would have had to stop. Instead, I kept plugging away and finished the project with energy to go.
Plus, I discovered something else…I actually enjoy breakfast time. I don’t just eat and run. I take time to sit down and enjoy my meal, pray, read some emails and not rush through it. I think that’s just as bad as skipping meals. Our bodies can’t properly digest food when we rush eating.
Today, I’m sharing some of my favs for a light breakfast dish:
- Slice of toast with jam or butter
- Hash browns with 2 slices of bacon
- 1 ham steak and 1 biscuit (no gravy)
- Half of grilled cheese sammy (this can be for breakfast right?)
- 1 slice tater tot casserole (can be made night before)
- 1 breakfast croissant
- Cereal and milk
- Fresh fruit
- 1 cinnamon raisin bagel
- 1 sausage or bacon biscuit (no cheese)
I definitely love the pancakes, waffles, or Rueben sammies with maple syrup and strawberries, but they’re way too heavy! While working, it’s important to eat lighter and healthier.
Now, you might wonder why I didn’t list eggs, well I can’t eat them. That is to say I’m able to eat them when I use them as a binder like cooking meatballs or baking.
Hubby is the egg eater in the family and he loves to make them with link sausages.
