Even in the winter time I love a fresh salad. It’s like an artist palette to me. I can dress it up anyway I like with ingredients I have on hand.
I can design a savory salad with fish or chicken or make a fruit salad with berries and citrus fruits. Berries are an excellent choice for salads, it adds just enough sweetness and choose your favorite green leaves.
I love buying the Organic Baby Spring Mix from my grocery store. It combines greens and lettuces like: red romaine, baby spinach, radicchio, green romaine, red oak leaf and more.

Chick peas are a wonderful condiment to a salad. What I love most about them is they take on the flavors of whatever is around them. I’d drizzle this salad with a balsamic vinaigrette salad dressing.
Eating healthy doesn’t have to mean that you have to eat boring, bland foods. In fact, I don’t think you have to sacrifice flavor just to feel like you’re losing unwanted fat. Mix it with your favorite ingredients, you can use a rotisserie chicken, just shred it and combine with veggies and fruits.
Or bake some salmon fillets and break them up and sprinkle them in your salad or if you like tuna, use that. There’s so many ways to dress a salad. And, if you need a little crunch, crumble up a couple of salt-free crackers. Salads can fill you up just like a 4-course meal.
