My absolute favorite fish is salmon and making a stew with it and potatoes just makes me lil heart go pitter patter! This is an easy dish to make and one that can feed the whole family.

1/2 stick butter
3 large potatoes, peeled and diced
1 large onion, diced
1 1/2 lb. piece salmon (preferably wild), skin discarded and cut into 1-inch pieces
5 ounces baby spinach
1 (15 oz.) can Carnation milk
1/2 gal. whole milk
Salt and pepper to taste
- Cook potatoes and onions until tender. Drain.
- Add butter, salt, pepper, spinach and both milks.
- Stir until spinach welts and then add the salmon.
- Cook until fish is done and serve hot.
