I love casseroles especially if potatoes are part of the mix.
This one contains zucchini but you can use any vegetable you like or have on hand. Warning: this dish will make your kitchen smell divine!
The melted cheese brings the dish altogether. It’s the best comfort food and makes a perfect side dish for a potluck, holiday table, or on a cold Fall day!
Potato Zucchini CasseroleCourse: Ordinary Recipes Made Gourmet
1/2 stick butter
2 c. sliced zucchini
1/2 c. Sweet (Vidalia) onion, coarsely chopped
1/2 c. chopped green onions (for garnish)
2 c. sliced potatoes
1/3 c. Parmesan cheese, grated
1/2 c. Mozzarella cheese, shredded
1/4 c. olive oil
- In a baking dish, melt butter. Layer vegetables in this order: zucchini, onion, potatoes, and more zucchini.
- Sprinkle Parmesan cheese over mixture. Sprinkle olive oil over top.
- Bake at 375 degrees for 20 minutes. Remove, spread Mozzarella cheese over top.
- Return to oven and bake 10 more minutes and finally top with green onions. Serves 8.
