I remember years ago when I first tried this dip. The place I worked at had a Christmas party, sort of a potluck, and one of my co-workers made this artichoke dip.
Before that, I had never eaten artichokes, didn’t know what they tasted like or if I would like them. Well…after tasting this dip, I knew I had to make it myself. I absolutely fell in love with it.
Since that party, I’ve made this dip many times but then my friend Heather sent me her variation which is what I’m sharing with you today.
It’s a great healthy snack and works so good for in between meals. The key about this recipe is using canned artichoke hearts. This makes this an easy and quick go to dish.
Hot Spinach Artichoke Dip
Course: Ordinary Recipes Made GourmetIngredients
1 pkg. Knorr Vegetable Recipe mix
1 pkg. cream cheese softened (8 oz.)
1-1/2 c. shredded cheddar cheese
1 can (14 oz.) artichoke hearts, drained and chopped
1 pkg. frozen chopped spinach, thawed and squeezed dry
3/4 c. Mayo
OPTIONAL: 1 can water chestnuts, drained and chopped fine
Directions
- Mix all ingredients in a 2 quart casserole dish, saving 1/2 cup of cheese to sprinkle on top.
- Then bake at 350 for about 30 to 40 minutes.
- Remove and then sprinkle cheese on top and it will melt.
- Serve in ramekins with garlic bread! Or on top of crackers for a nice, light snack!
