Healthy Recipes: Spinach Artichoke Dip

I remember years ago when I first tried this dip. The place I worked at had a Christmas party, sort of a potluck, and one of my co-workers made an artichoke dip. Before that, I had never eaten artichokes, didn’t know what they tasted like or if I would like them. Well…I absolutely fell in love with it. I’ve made this dip many times but then my friend Heather sent me her variation which is what I’m sharing with you today.

It’s a great healthy snack and works so good for in between meals. And you can use canned artichoke hearts which is what I used as well as spinach. This is such an easy and quick go-to dish.

Healthy Recipes: Spinach Artichoke Dip

Ingredients:

1 pkg. Knorr Vegetable Recipe mix
1 pkg. cream cheese softened (8 oz.)
1-1/2 c. shredded cheddar cheese
1 can (14 oz.) artichoke hearts, drained and chopped
1 pkg. frozen chopped spinach, thawed and squeezed dry
3/4 c. Mayo
1 can water chestnuts, drained and chopped fine (optional)

Instructions:

Mix all ingredients in a 2 quart casserole dish, saving 1/2 cup of cheese to sprinkle on top. Then bake at 350 for about 30 to 40 minutes. Remove and then sprinkle cheese on top and it will melt. Serve in ramekins with garlic bread! Serve on top of your favorite crackers for a nice, light snack! ENJOY!
