I know many of my friends love coconut so this recipe is for you! These would be perfect to serve up at a party and works great as a finger food. It’s really easy to make as well and can be made ahead of the same day as your event.
Chocolate Covered Coconut BallsCourse: Ordinary Recipes Made Gourmet
1 (6 oz.) pkg. chocolate morsels
2 tbsp. butter
1 c. powdered sugar
1/2 tsp. vanilla
Dash of salt
1/2 c. flaked coconut
1/2 c. chopped nuts
- In medium saucepan melt chocolate and butter on low heat, stirring constantly. Cool to lukewarm.
- Beat in egg until smooth and glossy.
- Add sifted powdered sugar, vanilla and salt; mix well. Stir in coconut and nuts. Chill 1 hour.
- Shape into small balls. Roll in additional coconut. Put on cookie sheet and chill for 3 hours. Serve up with a cup of coffee or hot chocolate!
Optional: insert those colorful toothpicks to plate them up, that would look so cute!
